Koulourakia

Village: VarosMy family loves my Mum's Koulourakia recipe as they are a little cakey than most. When accompanied with a cup of coffee, they simply melt in your mouth!

6 eggs
250g unsalted butter
1 cup white sugar
1kg self raising flour (approx)
around 15g vanillin sugar (1/2 a small spice bottle)
1 tsp baking powder
1/4 cup fresh creamInstructions
1. Use butter at room temperature
2. Beat butter until soft and then beat in both the white sugar and vanillin sugar
3. Next beat in one egg at a time, making sure than each egg is combined before the next one is added, then mix in the fresh cream
4. Sift flour with baking powder and gradually add to the mixture until a soft dough forms. Don't use all the flour if not needed
5. Make koulourakia shapes with a pastry machine or by hand and place onto baking trays lined with baking paper
6. Brush each koulouraki with egg wash (and add sesame seeds at this point if you like)
7. Bake at 175ºC until slightly golden brown (depending on your oven, this may only be 8 mins per tray! so keep an eye on it)
